| If somebody asks how you get
enough protein on a vegan diet, just ask them "what is protein?" They
won't know, but Bill gives the answer and if you remember it you'll win
hands down next time. All the essential amino acids, fatty acids, and true
vitamins are made only by plants.
But how come all the phytonutrients and antioxidants are also made only by plants? What's the difference between an essential nutrient and an essential metabolite, and why do we keep on with that shaggy 1904 neologism "Vitamin" when all it does is confuse the question? Is our poor conversion rate of the carotenoids to retinoids evidence that we're really carnivores or is it evidence that we're plant eaters trying to stay out of retinoid toxicity? Are nuts a healthy part of the human diet or are they too high in fat? Our gurus push for high carb, low fat diets, what about the other side of the fence that says just the opposite? Should everybody take flaxseed or may there be some problems? I'm a health vegetarian, why should I care about animal rights or the environment? What's the best thing about a vegan diet? It's full of fiber. What's the worst thing about a vegan diet? It's full of fiber. A fairly technical lecture, so see how far you can get. |
